Hello, foodies! Today, I am excited to share with you a recipe that is perfect for those days when you’re in the mood for something sweet, spicy, and full of flavor. This spicy pineapple chicken stir-fry is a dish that never fails to bring a smile to my face with its vibrant colors and explosive taste. Whether it’s a busy weeknight or a relaxed weekend dinner, this dish is sure to impress.

Ingredients:

  • boneless, skinless chicken breast (350g)
  • pineapple chunks (200g)
  • bell peppers, sliced (150g)
  • onion, diced (100g)
  • garlic, minced (10g)
  • ginger, grated (5g)
  • soy sauce (30ml)
  • honey (15ml)
  • sriracha sauce (10ml)
  • cornstarch (15g)
  • vegetable oil (30ml)
  • salt and pepper, to taste

Kitchen Tools:

  • wok
  • chef’s knife
  • cutting board
  • measuring cups
  • measuring spoons
  • whisk

To start, heat vegetable oil in a wok over medium-high heat. Add the diced chicken breast and cook until browned and cooked through. Remove the chicken from the wok and set aside.

In the same wok, add a bit more oil if needed, then sauté the garlic, ginger, and diced onions until fragrant. Add in the sliced bell peppers and cook until slightly softened.

In a small bowl, whisk together soy sauce, honey, sriracha sauce, and cornstarch to make the sauce. Pour the sauce into the wok and bring to a simmer. Add the cooked chicken back to the wok, along with the pineapple chunks. Stir well to coat everything in the sauce.

Season with salt and pepper to taste, and let the dish simmer for a few more minutes until the sauce has thickened and everything is heated through.

Serve the spicy pineapple chicken stir-fry hot over steamed rice or noodles. Enjoy the perfect balance of sweet and spicy flavors in every bite!
