Sweet & Spicy: Pineapple Chicken Stir-Fry Recipe

Today’s Delight: Spicy Pineapple Chicken Stir-Fry

I’m excited to share a unique and flavorful recipe with you today that combines the sweetness of pineapple with the bold kick of spices in a delicious stir-fry. This dish is perfect for a casual dinner with friends or a cozy night in with the family.

Ingredients:

  • boneless, skinless chicken breast (300g)
  • fresh pineapple chunks (200g)
  • red bell pepper (1, sliced)
  • onion (1, sliced)
  • garlic (3 cloves, minced)
  • ginger (1-inch piece, minced)
  • soy sauce (50ml)
  • hoisin sauce (30ml)
  • sesame oil (15ml)
  • chili flakes (1 tsp)
  • cornstarch (1 tbsp)
  • vegetable oil (30ml)
  • salt and pepper to taste

Kitchen Tools:

  • wok
  • knife
  • cutting board
  • measuring cups and spoons

Start by marinating the chicken strips with soy sauce, hoisin sauce, minced garlic, minced ginger, chili flakes, salt, and pepper for at least 30 minutes. In a hot wok, heat vegetable oil and stir-fry the marinated chicken until cooked through. Remove the chicken from the wok and set it aside.

In the same wok, add a little more oil if needed and sauté the sliced onion and red bell pepper until they start to soften. Add in the pineapple chunks and continue to cook until they caramelize slightly.

Return the cooked chicken to the wok and mix everything together. In a small bowl, mix cornstarch with water to create a slurry, then pour it over the stir-fry to thicken the sauce. Drizzle with sesame oil and give it a final toss to coat everything evenly.

Remove the wok from the heat and serve the spicy pineapple chicken stir-fry hot over steamed rice or noodles. The combination of sweet pineapple and spicy flavors will surely be a hit at the dinner table.
