Spicy Thai Pineapple Fried Rice

Today, I’m excited to share a recipe that combines the sweetness of pineapple with the bold flavors of Thai cuisine. This dish is perfect for a cozy night in or for impressing guests with its unique twist on classic fried rice.

Ingredients:

  • 400g cooked jasmine rice
  • 200g diced fresh pineapple
  • 100g chopped red bell pepper
  • 50g thinly sliced green onions
  • 3 cloves of minced garlic
  • a handful of chopped cilantro
  • 50g chopped roasted peanuts
  • 2 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 1 tbsp sriracha sauce

Kitchen Tools:

  • wok
  • wooden spoon
  • knife
  • cutting board

To start, heat the vegetable oil in a wok over medium-high heat. Add the minced garlic and cook until fragrant. Next, add the chopped red bell pepper and cook until slightly softened.

Add the diced pineapple to the wok and stir-fry for a few minutes until it starts to caramelize. Push the ingredients to one side of the wok and crack in an egg. Scramble the egg and mix it with the rest of the ingredients.

Now, add the cooked jasmine rice to the wok, breaking up any clumps as you stir-fry everything together. Pour in the soy sauce and sriracha sauce, ensuring everything is evenly coated.

Finally, add the thinly sliced green onions, chopped cilantro, and chopped roasted peanuts to the wok. Stir everything together until well combined and heated through.

Serving:

The approximate total weight of the cooked dish is 1100g, with 4 servings at 275g each. Each serving is approximately 350 calories.

One unique tip for this dish is to add a splash of pineapple juice while stir-frying for an extra burst of fruity flavor. It elevates the dish to a whole new level!
