Ingredients:

  • cream cheese (250g)
  • sugar (150g)
  • eggs (2)
  • lemon zest and juice (1 lemon)
  • vanilla extract (1 tsp)
  • blueberries (100g)
  • butter (50g)
  • digestive biscuits (150g)

To start, preheat your oven to 180°C. In a food processor, crush the digestive biscuits until they resemble fine crumbs. Melt the butter and mix it with the biscuit crumbs. Press this mixture into the bottom of a lined baking dish. Bake for 10 minutes until set.

In a mixing bowl, beat the cream cheese and sugar until smooth. Add in the eggs, lemon zest, lemon juice, and vanilla extract, mixing until well combined. Gently fold in the blueberries.
