Today, I’m sharing a recipe for spicy mango pulled pork tacos that are perfect for a summer fiesta or a casual dinner with friends. The combination of tender, flavorful pulled pork with a tangy mango salsa is sure to impress your taste buds!

Ingredients:

  • pork shoulder (boneless) – 750g
  • mango – 2, diced
  • red onion – 1, finely chopped
  • jalapeno pepper – 1, minced
  • lime – 1, juiced
  • garlic – 3 cloves, minced
  • cumin – 1 tsp
  • chili powder – 1 tsp
  • paprika – 1 tsp
  • salt – 1 tsp
  • pepper – 1/2 tsp
  • corn tortillas – 12

  • cutting board

To start, rub the pork shoulder with a mixture of cumin, chili powder, paprika, salt, and pepper. Place it in the slow cooker and cook on low for 8 hours or until tender and easy to shred with a fork.

In a mixing bowl, combine diced mango, chopped red onion, minced jalapeno pepper, minced garlic, and lime juice to make the salsa. Season with salt and pepper to taste.

Once the pork is cooked, shred it with a fork and mix in some of the cooking juices for extra flavor. Serve the pulled pork on warm corn tortillas topped with the mango salsa.
