Tantalizing Blueberry Lemon Cheesecake Bars Perfect for Summer!

Blueberry Lemon Cheesecake Bars

Today, I’m excited to share a delightful dessert recipe that’s perfect for summer gatherings or a sweet treat at home. These Blueberry Lemon Cheesecake Bars are a beautiful balance of tangy lemon, creamy cheesecake, and juicy blueberries, all nestled on a buttery graham cracker crust.

Ingredients:

  • 150g graham crackers
  • 120g unsalted butter, melted
  • 250g cream cheese, softened
  • 150g granulated sugar
  • 2 eggs
  • Zest of 1 large lemon
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract
  • 150g fresh blueberries

Kitchen Tools:

  • grater

To start, preheat your oven to 350°F (180°C) and line a square baking pan with parchment paper. In a mixing bowl, crush the graham crackers into fine crumbs and mix in the melted butter. Press the mixture firmly into the bottom of the prepared pan to form the crust.

In another bowl, beat the cream cheese and sugar together until smooth. Add in the eggs one at a time, mixing well after each addition. Stir in the lemon zest, lemon juice, and vanilla extract until fully combined. Pour the cheesecake filling over the crust and smooth it out evenly.

Scatter the fresh blueberries over the top of the cheesecake filling. Bake in the preheated oven for 30-35 minutes, or until the edges are set and the center is slightly jiggly. Let the bars cool completely at room temperature, then refrigerate for at least 2 hours to set.

Once chilled, carefully lift the cheesecake bars out of the pan using the parchment paper. Cut into squares and serve. These Blueberry Lemon Cheesecake Bars are best enjoyed cold, with an extra sprinkle of lemon zest on top for a burst of freshness.

The total weight of the cooked dish is approximately 800g, with 9 servings. Each serving weighs around 90g, with an estimated calorie count of 250 per serving.

For an extra special touch, try adding a drizzle of warm blueberry compote on top of the bars before serving. It adds a beautiful contrast of flavors and enhances the fruity essence of the blueberries.
