Ingredients:

  • 1 ripe mango, diced
  • 200g chicken breast, thinly sliced
  • 50ml teriyaki sauce
  • 1 jalapeno, thinly sliced
  • 1 lime, juiced
  • 4 corn tortillas
  • Fresh cilantro, chopped
  • 1/2 red onion, thinly sliced
  • 1 avocado, sliced

Start by marinating the sliced chicken breast in the teriyaki sauce for at least 30 minutes to allow the flavors to meld together. Next, heat a grill pan over medium heat and cook the marinated chicken breast until cooked through and slightly charred, about 3-4 minutes per side. As the chicken cooks, warm the corn tortillas on the grill pan for about 30 seconds on each side.
