The combination of sweet mangoes, creamy coconut milk, and spicy curry paste creates a flavorful and satisfying meal that will surely impress your taste buds.

Ingredients:

  • 2 ripe mangoes (peeled and cubed)
  • 400g chicken breast (cut into bite-sized pieces)
  • 1 can (400ml) coconut milk
  • 2 tbsp red curry paste
  • 1 red bell pepper (sliced)
  • 1 onion (sliced)
  • 2 cloves garlic (minced)
  • 1 tsp ginger (grated)
  • 2 tbsp soy sauce
  • 1 tbsp coconut sugar
  • Fresh cilantro (for garnish)

To start, heat some oil in a large skillet over medium heat. Add the sliced onion, minced garlic, and grated ginger. Sauté until the onion is translucent and fragrant. Next, add the red curry paste and stir until fragrant.

Add the chicken breast pieces to the skillet and cook until browned on all sides. Then, pour in the coconut milk, soy sauce, and coconut sugar. Let the mixture simmer for about 15 minutes, allowing the flavors to meld together.

Once the chicken is cooked through, add the sliced red bell pepper and cubed mangoes to the skillet. Cook for an additional 5 minutes until the vegetables are tender but still slightly crisp.

Give the curry a taste and adjust the seasoning if needed. Serve the spicy mango coconut curry hot over steamed rice and garnish with fresh cilantro. Enjoy this delightful fusion of flavors!
