Today, I’m excited to share a recipe that combines sweet and spicy flavors in a delicious taco filling. These spicy mango shrimp tacos are perfect for a summer gathering or a quick weeknight meal. The juicy mango pairs perfectly with the flavorful shrimp, creating a mouth-watering combination that will have you coming back for more.

Ingredients:

  • skillet
  • food processor
  • 250g shrimp, peeled and deveined
  • 1 ripe mango, diced
  • 1 red chili pepper, diced
  • 2 cloves of garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 8 small corn tortillas

To start, heat the olive oil in a skillet over medium heat. Add the minced garlic and diced chili pepper, sautéing until fragrant. Next, add the shrimp to the skillet, seasoning with cumin, chili powder, salt, and pepper. Cook the shrimp until they are pink and opaque.

While the shrimp is cooking, prepare the mango salsa. In a food processor, combine the diced mango with a squeeze of lime juice and a pinch of salt. Pulse until the mango is finely chopped but still has some texture.

Warm the corn tortillas in a dry skillet until they are pliable. Fill each tortilla with a spoonful of the spicy mango salsa and top with a few shrimp. Serve the tacos with a wedge of lime for squeezing over the top.

This recipe makes approximately 8 tacos, with each taco weighing around 100g. One serving is two tacos, providing around 300 calories.

An unusual tip for this recipe is to marinate the shrimp in the mango salsa for a few hours before cooking. This will infuse the shrimp with even more flavor and create a truly delicious filling for your tacos.
