Tantalizing Summer Berry Tart: A Refreshing Dessert Delight

Summer Berry Tart

Today, I’m excited to share a vibrant and refreshing dessert perfect for the hot summer days. This summer berry tart is bursting with juicy berries and enveloped in a light, flaky crust that will impress your friends and family at any gathering.

Ingredients:

  • 1 sheet of frozen puff pastry (thawed)
  • 200g mixed berries (such as blueberries, raspberries, and strawberries)
  • 100g cream cheese (softened)
  • 50g powdered sugar
  • 1 tsp vanilla extract
  • Zest of 1 lemon
  • 1 egg (beaten)
  • 2 tbsp honey

Kitchen Tools:

  • parchment paper
  • mixing bowl
  • pastry brush

Start by preheating your oven to 375°F (190°C) and lining a baking sheet with parchment paper. Roll out the thawed puff pastry on a floured surface with a rolling pin until it’s about 1/4 inch thick. Place the rolled pastry onto the prepared baking sheet.

In a mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and lemon zest. Spread this mixture evenly over the puff pastry, leaving a small border around the edges. Arrange the mixed berries on top of the cream cheese mixture.

Fold the edges of the puff pastry over the berries to create a rustic tart shape. Brush the edges with the beaten egg to give it a golden finish when baked. Drizzle the honey over the berries.

Bake the tart in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the berries are bubbly. Allow the tart to cool slightly before slicing and serving.

The total weight of the cooked summer berry tart is approximately 600g, making around 6 servings. Each serving weighs around 100g, with an estimated calorie count of 200 calories per serving.

A unique tip for this recipe is to sprinkle some crushed pistachios over the tart before serving for added crunch and a pop of color.
