Spicy Teriyaki Tacos with Pineapple Salsa

As the weather starts to warm up, I find myself craving fresh and vibrant flavors to liven up my meals. Today, I’m sharing a recipe for Spicy Teriyaki Tacos with Pineapple Salsa that combines the sweet and tangy notes of teriyaki with the tropical twist of pineapple salsa. It’s a perfect dish for a summer gathering or a quick weeknight dinner.

Ingredients:

  • boneless chicken thighs (400g)
  • teriyaki sauce (150ml)
  • pineapple, diced (200g)
  • red bell pepper, diced (100g)
  • red onion, diced (50g)
  • jalapeno, finely chopped (1)
  • lime, juiced (1)
  • tortillas (6)
  • cilantro, chopped (a handful)
  • salt and pepper to taste

Kitchen Tools:

  • chef’s knife
  • cutting board
  • mixing bowl
  • tongs

Start by marinating the chicken thighs in the teriyaki sauce for at least 30 minutes to allow the flavors to penetrate the meat. While the chicken is marinating, combine the diced pineapple, red bell pepper, red onion, jalapeno, lime juice, and chopped cilantro in a mixing bowl to make the salsa. Season with salt and pepper to taste and set aside.

Heat a grill pan over medium-high heat and grill the marinated chicken thighs for about 5-6 minutes per side, or until they are cooked through and have beautiful grill marks.

Once the chicken is done, remove it from the grill pan and let it rest for a few minutes before slicing it into strips.

To assemble the tacos, warm the tortillas on the grill pan for a few seconds on each side. Place a few strips of grilled chicken on each tortilla and top with a generous spoonful of pineapple salsa.
