  • 8 corn tortillas
  • 1/2 red onion, thinly sliced
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 jalapeno, thinly sliced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt

To start, season the shrimp with cumin, paprika, and salt. Heat a grill pan over medium-high heat and cook the shrimp for 2-3 minutes per side until they are pink and cooked through. Remove from heat and set aside.

In a mixing bowl, combine the diced mango, red onion, cilantro, jalapeno, and lime juice to make the salsa. Mix well and set aside.

Warm the corn tortillas on the grill pan for about 30 seconds on each side until they are heated through and slightly charred.

To assemble the tacos, place a spoonful of the mango salsa on each tortilla, top with shrimp, avocado slices, and a sprinkle of extra cilantro. Serve with extra lime wedges on the side for squeezing over the tacos.
