As the weather warms up, I love experimenting with fresh ingredients and bold flavors to create dishes that truly celebrate the season. Join me on this culinary adventure as we explore a new and exciting recipe that will surely delight your taste buds.

Citrus-infused Harvest Pasta

For this recipe, we will be combining the vibrant flavors of summer citrus with hearty harvest vegetables to create a refreshing and satisfying pasta dish. The zesty citrus notes pair beautifully with the earthy vegetables, creating a harmonious blend of flavors that will leave you craving more.

Ingredients:

  • penne pasta (250g)
  • zucchini (1 large, diced)
  • yellow squash (1 large, diced)
  • red bell pepper (1, sliced)
  • orange zest (from 1 orange)
  • lemon zest (from 1 lemon)
  • fresh basil leaves (handful, chopped)
  • olive oil (2 tbsp)
  • salt and pepper to taste

Kitchen Tools:

  • large pot
  • skillet
  • colander
  • zester

To start, bring a large pot of salted water to a boil and cook the penne pasta according to package instructions. In a skillet, heat olive oil over medium heat and sauté the diced zucchini, yellow squash, and sliced red bell pepper until they are tender.

Once the pasta is cooked al dente, drain it in a colander and add it to the skillet with the sautéed vegetables. Toss everything together gently and season with salt and pepper to taste. Add the orange and lemon zest to the pasta and vegetables, giving the dish a refreshing citrus kick.

To finish, sprinkle the chopped fresh basil over the pasta and vegetables, giving the dish a fragrant and herbaceous note. Serve the citrus-infused harvest pasta warm, allowing the flavors to meld together beautifully.

The approximate total weight of the cooked dish is 700g, with 4 servings at 175g each. Each serving is approximately 300 calories.

One clever tip for this recipe is to reserve some of the citrus zest and basil to garnish each serving individually, adding a burst of fresh flavor right before enjoying the dish.

I encourage you to try this unique citrus-infused harvest pasta recipe and feel free to add your own creative twist. Let your taste buds guide you on this culinary journey and savor the vibrant flavors of the season. Happy cooking!
