Ingredients (approximate weights):

  • 1 ripe mango (200g), diced
  • 400g shrimp, peeled and deveined
  • 1 jalapeno, minced
  • 1/2 red onion, thinly sliced
  • 1 lime, juiced
  • Handful of fresh cilantro, chopped
  • 6 small flour tortillas
  • Spices: cumin, chili powder, paprika, salt, pepper

To start, heat a skillet over medium heat and add the shrimp. Season with cumin, chili powder, paprika, salt, and pepper. Cook for 2-3 minutes per side, or until the shrimp is pink and cooked through. Remove from the skillet and set aside.

In a mixing bowl, combine the diced mango, minced jalapeno, sliced red onion, lime juice, and chopped cilantro. Mix well to combine all the flavors.

Warm the flour tortillas in the skillet for 1 minute on each side until they are slightly charred and pliable.

To assemble the tacos, place a spoonful of the mango salsa on each tortilla, followed by a few shrimp. Serve with extra lime wedges on the side for an added burst of citrus flavor.

The cooked dish weighs approximately 900g, serves 4 people, with each serving weighing around 225g. Each serving is estimated to have around 300 calories.

One tip to make these tacos even more delicious is to char the tortillas directly over an open flame for a smoky flavor before assembling the tacos.
