Greetings, foodies! Today, I am excited to share a unique recipe inspired by a recent trip to a farmer’s market. The vibrant colors and fresh aromas sparked my creativity, leading me to create a fusion dish that combines Middle Eastern and Mexican flavors. Ingredients:

  • grilled eggplant (200g)
  • mango salsa (100g)
  • shawarma-seasoned chicken breast (150g)
  • jicama slaw (75g)
  • pickled red onions (50g)
  • hummus (50g)
  • tortilla wrap

Kitchen Tools:

  • grill pan

  • cutting board
  • mixing bowl
  • spatula

To start, grill the eggplant slices until tender and slightly charred. While the eggplant is cooking, prepare the mango salsa by combining diced mango, jalapeno, red onion, cilantro, lime juice, and a pinch of salt in a bowl. Set aside.

Next, grill the shawarma-seasoned chicken breast until fully cooked. In a separate bowl, mix together the jicama slaw with a dressing of lime juice, olive oil, cumin, and a touch of honey.

To assemble the wrap, spread a layer of hummus on the tortilla wrap. Top with the grilled eggplant, mango salsa, shawarma chicken, jicama slaw, and pickled red onions. Roll up the wrap tightly and secure with a toothpick if needed.
