For this recipe, you’ll need the following ingredients:

  • 300g Arborio rice
  • 250g shrimp, peeled and deveined
  • 1 liter vegetable broth
  • 150ml white wine
  • Zest and juice of 2 lemons
  • 50g Parmesan cheese, grated
  • 50g butter
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • Handful of fresh parsley, chopped
  • Salt and pepper to taste

To make this Lemon Shrimp Risotto, you’ll need the following kitchen tools:

  • wooden spoon
  • grater
  • chef’s knife
  • cutting board
  • lemon juicer

Start by heating the vegetable broth in a saucepan over low heat. In another large saucepan, melt half of the butter and sauté the onion and garlic until translucent. Add the Arborio rice to the pan and toast it for a few minutes until slightly golden.

Deglaze the pan with the white wine and let it simmer until the wine is absorbed. Begin adding the warm vegetable broth one ladle at a time, stirring constantly until the liquid is absorbed before adding more. This process should take about 18-20 minutes until the rice is tender but still al dente.

While the risotto is cooking, season the shrimp with salt, pepper, and lemon zest. In a separate pan, heat the remaining butter and cook the shrimp for 2-3 minutes on each side until pink and cooked through. Remove from heat and set aside.

Once the risotto is creamy and cooked to your liking, stir in the grated Parmesan cheese, lemon juice, and chopped parsley. Gently fold in the cooked shrimp, making sure to reserve a few for garnish.

To serve, divide the Lemon Shrimp Risotto among plates, top with the remaining shrimp, and sprinkle with extra Parmesan and parsley. Enjoy this flavorful and comforting dish with a glass of crisp white wine.
