Introduction

Today, I am excited to share with you a unique dish that combines the flavors of Thailand with a touch of Mediterranean influence. This dish is perfect for a laid-back weekend meal with friends or a cozy night in with loved ones. The combination of ingredients may seem unusual, but trust me, the end result is a taste sensation like no other.

Ingredients

  • cooking oil (30 ml)
  • lemongrass (2 stalks)
  • lamb chops (400g)
  • capers (20g)
  • red curry paste (50g)
  • canned chickpeas (400g)
  • white wine (150 ml)
  • coconut milk (400 ml)
  • sun-dried tomatoes (50g)
  • coriander (a handful for garnish)

  • medium saucepan
  • spatula

Preparation

To start, heat the cooking oil in a medium saucepan over medium heat. Add the chopped lemongrass and cook for a couple of minutes until fragrant. Next, add the lamb chops and sear them until browned on both sides.

Once the lamb chops are browned, add the capers, red curry paste, canned chickpeas, white wine, coconut milk, and sun-dried tomatoes to the saucepan. Stir everything together and bring to a simmer. Cover the saucepan and let it cook for about 30 minutes, or until the lamb is tender.

Serving

Once the dish is ready, garnish with fresh coriander and serve hot. This dish pairs well with steamed rice or crusty bread to soak up the flavorful sauce. Enjoy the unique blend of Thai and Mediterranean flavors in every bite.
