Ingredients

  • risotto rice (200g)
  • sushi rice (150g)
  • dashi stock (500ml)
  • mozzarella cheese (150g)
  • nori sheets (3 sheets)
  • soy sauce (50ml)
  • mirin (30ml)
  • sugar (2 tbsp)
  • sesame seeds (1 tbsp)
  • spring onions (2, chopped)

  • wooden spoon
  • sharp knife
  • grater

Preparation

I start by cooking the risotto rice in the rice cooker with the dashi stock until it’s creamy. In a saucepan, I cook the sushi rice with a mixture of soy sauce, mirin, and sugar until it’s sticky. Then, I mix the two types of rice together.

Next, I fold in the mozzarella cheese until it’s melted and gooey. I cut the nori sheets into small squares and mix them into the rice for a subtle seaweed flavor. Finally, I sprinkle sesame seeds and chopped spring onions on top for a bit of crunch and freshness.

Serving

This dish weighs approximately 1200g once cooked and serves 4. Each serving has around 300 calories.

Tips

For an extra crispy texture, try pan-frying the rice mixture in a non-stick skillet until golden brown before serving.
