This dish is a perfect blend of fall flavors that will leave you feeling satisfied and content.

Ingredients:

  • butternut squash (500g)
  • pasta of your choice (300g)
  • heavy cream (200ml)
  • garlic cloves (3)
  • fresh sage leaves (12)
  • butter (50g)
  • nutmeg (1/2 tsp)
  • parmesan cheese (50g)
  • salt and pepper to taste

  • skillet

To start, preheat your oven to 400°F (200°C). Peel and dice the butternut squash into small cubes, then place them on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and roast in the oven until the squash is tender and slightly caramelized, about 30 minutes.

In the meantime, cook the pasta according to the package instructions until al dente. Drain and set aside. In a skillet, melt the butter over medium heat. Add minced garlic and chopped sage leaves, sautéing until fragrant. Remove from heat.

Transfer the roasted butternut squash to a blender and add the sautéed garlic and sage mixture, heavy cream, nutmeg, salt, and pepper. Blend until smooth and creamy. Pour the butternut squash cream sauce back into the skillet and heat over low heat. Add the cooked pasta and toss until well coated.

Finally, grate parmesan cheese over the pasta and stir to combine. Serve hot, garnished with additional sage leaves and a sprinkle of black pepper. This creamy butternut squash pasta is the epitome of fall comfort food — rich, flavorful, and oh-so-satisfying.
