Growing up, I always looked forward to family gatherings where my grandmother would cook up a storm in the kitchen. Today, I’m sharing a special dish that reminds me of those nostalgic moments: Ginger-Soy Glazed Pork Belly. This recipe is a fusion of sweet and savory flavors that is sure to impress your loved ones at your next dinner party.

Ingredients:

  • 500g pork belly
  • 50g ginger
  • 100ml soy sauce
  • 50g brown sugar
  • 50ml rice vinegar
  • 3 cloves of garlic
  • 2 pieces of star anise
  • Spring onions for garnish

To start, preheat your oven to 180°C. Pat dry the pork belly with paper towels and score the skin with a sharp knife. Place the pork belly in a roasting pan and roast in the oven for 1 hour or until the skin is crispy.

In a saucepan, combine the soy sauce, brown sugar, rice vinegar, minced garlic, and grated ginger. Bring the mixture to a boil, then reduce the heat and let it simmer until the sauce thickens.

Once the pork belly is done roasting, remove it from the oven and brush the ginger-soy glaze over the top. Transfer the pork belly to a heated grill pan and grill each side for 2-3 minutes until caramelized.

To serve, slice the pork belly into thick pieces and garnish with chopped spring onions. The combination of tender pork belly with a sticky ginger-soy glaze is truly irresistible.
