Ingredients:

  • 4 large bell peppers
  • 2 ripe plantains (about 400g)
  • 1 cup cooked quinoa
  • 1/2 cup black beans
  • 1/4 cup feta cheese
  • 1/4 cup chopped cilantro
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
