Ingredients:

  • dried ramen noodles (200g)
  • miso paste (60g)
  • dashi stock (1 liter)
  • grilled shrimp (200g)
  • scallions (50g)
  • tofu (150g)
  • black garlic oil (30ml)
  • seaweed (10g)

  • strainer
  • knife

To start, cook the dried ramen noodles according to package instructions and set aside. In a saucepan, heat the dashi stock over medium heat and whisk in the miso paste until fully dissolved. Allow the broth to simmer for about 5 minutes to develop the flavors.

While the broth is simmering, grill the shrimp on a hot grill pan until they are nicely charred on both sides. Slice the scallions and tofu into thin strips. In a separate pot of boiling water, blanch the tofu for a few minutes until heated through.

Once the broth is ready, assemble your ramen bowl by placing the cooked noodles at the bottom. Ladle the hot miso broth over the noodles and top with the grilled shrimp, blanched tofu, sliced scallions, seaweed, and a drizzle of black garlic oil.
