Let’s dive into how to make these tasty Beetroot and Tofu Stuffed Bell Peppers!

Ingredients:

  • 2 large bell peppers
  • 150g beetroot, grated
  • 200g firm tofu, crumbled
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tsp cumin powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Kitchen Tools:

To start, preheat your oven to 180°C. Cut the tops off the bell peppers and remove the seeds and membranes. Place the bell peppers in a baking dish and set aside.

In a skillet, heat some olive oil over medium heat. Add the chopped onions and garlic and sauté until they are soft and fragrant. Next, add the grated beetroot and crumbled tofu to the skillet. Season with cumin powder, smoked paprika, salt, and pepper. Cook everything together for about 5-7 minutes until the mixture is well combined.

Spoon the beetroot and tofu mixture into the hollowed-out bell peppers, pressing down gently to pack the filling in tightly. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the bell peppers are tender.

Once the bell peppers are cooked through, remove them from the oven and garnish with fresh chopped parsley. Serve hot and enjoy these flavorful Beetroot and Tofu Stuffed Bell Peppers!
