For this dish, you’ll need some unique ingredients that might surprise you. Gather up 2 ripe mangoes (about 400g), 1 can of coconut milk (400ml), 1 red bell pepper (100g), 1 yellow onion (150g), 2 cloves of garlic, 1 tablespoon of curry powder, 1 tablespoon of soy sauce, a handful of fresh cilantro, and 200g of diced tofu for a vegan option or 300g of cooked shrimp for a seafood twist.

Start by peeling and dicing the mangoes into chunks, finely chopping the onion and bell pepper, mincing the garlic, and chopping the cilantro.
