Ingredients:

  • 400ml coconut milk
  • 2 tbsp red curry paste
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 1-inch piece of fresh ginger, grated

  • 1 lime, juiced
  • Fresh cilantro, for garnish
  • Salt and pepper, to taste
