Tropical Delight: A Flavorful Journey with Mango and Shrimp

I’m excited to share a new exotic recipe with you today that’s perfect for transporting your taste buds to a tropical paradise. The combination of flavors and textures in this dish is simply out of this world, and I can’t wait for you to try it out!

For this recipe, you’ll need the following ingredients (approximate weights):

  • 400ml coconut milk
  • 1 ripe mango (about 250g)
  • 2 stalks lemongrass
  • 1 red chili pepper
  • 1 tsp turmeric powder
  • 200g rice noodles
  • 200g shrimp, peeled and deveined
  • 1 lime
  • 2 tbsp coconut oil

To bring this dish to life, you’ll also need the following kitchen tools:

  • chef’s knife
  • cutting board
  • grater
  • saucepan
  • stirring spoon

Start by preparing your ingredients. Peel and dice the mango, finely chop the lemongrass and chili pepper, and zest the lime. In a saucepan, heat the coconut oil over medium heat and sauté the lemongrass, chili pepper, and turmeric powder until fragrant.

Add the coconut milk to the saucepan and bring it to a simmer. Cook for about 10 minutes to let the flavors meld together. Meanwhile, cook the rice noodles according to the package instructions and set aside.

Once the coconut milk mixture has simmered, add the shrimp and mango to the saucepan. Cook for another 5 minutes until the shrimp are pink and cooked through. Squeeze in the lime juice and stir in the lime zest.

To serve, divide the cooked rice noodles into bowls and ladle the shrimp and mango coconut curry over the top. Garnish with fresh cilantro and a squeeze of lime juice for an extra burst of flavor.

This exotic dish weighs approximately 1200 grams once cooked and serves 4 people. Each serving is around 300 grams and packs a punch of approximately 400 calories.

One clever tip for this recipe is to add a splash of coconut milk to the rice noodles before serving. This will help keep them moist and add an extra layer of coconut flavor to the dish.
