Ingredients:

  • 350g shrimp, peeled and deveined
  • 200ml coconut milk
  • 1 lime, zest and juice
  • 50g coconut flakes
  • Handful of fresh cilantro, chopped
  • 6 small tortillas
  • Salt and pepper to taste

I start by marinating the shrimp in a mixture of coconut milk, lime zest, and a pinch of salt for about 20 minutes. Once the shrimp is done marinating, I heat a grill pan over medium heat and grill the shrimp for 2-3 minutes on each side until they are cooked through and slightly charred.

To assemble the tacos, I warm the tortillas in the same skillet I used for the coconut flakes. Then, I top each tortilla with a few shrimp, a sprinkle of toasted coconut flakes, a squeeze of fresh lime juice, and a sprinkle of fresh cilantro. The combination of flavors is truly a tropical paradise in each bite.

The total weight of the cooked dish is approximately 900g, and this recipe makes 3-4 servings. Each serving weighs about 225g, with an estimated calorie count of 350 per serving.
