Refreshing Coconut Lime Sorbet

Today, I’m excited to share a light and refreshing dessert that’s perfect for hot summer days or any time you need a palate cleanser after a heavy meal. This coconut lime sorbet is bursting with tropical flavors and the perfect balance of sweet and tangy notes. Let’s dive into how to make this unique and healthy treat.

Ingredients:

  • 400ml coconut milk
  • 100ml fresh lime juice
  • 100g honey
  • 50g toasted coconut flakes
  • a handful of fresh mint leaves

Kitchen Tools:

  • blender
  • saucepan
  • freezer-safe container

I start by combining the coconut milk and honey in a saucepan over low heat, stirring until the honey is fully dissolved. Once the mixture is smooth, I remove it from the heat and let it cool to room temperature. In a blender, I then combine the coconut milk mixture with fresh lime juice and blend until well combined.

Next, I pour the mixture into a freezer-safe container and freeze it for about 4 hours, stirring every hour to prevent ice crystals from forming. Once the sorbet reaches a slushy consistency, I let it freeze completely for another 2-3 hours.

To serve, I scoop the coconut lime sorbet into bowls and top it with toasted coconut flakes and fresh mint leaves for a burst of flavor and texture. The sorbet is creamy, tangy, and incredibly refreshing — the perfect guilt-free dessert for any occasion.

This recipe yields approximately 600g of sorbet, enough for 4 servings. Each serving is around 150g, with an estimated calorie count of 150 per serving.

One unique tip for this sorbet is to add a splash of rum or coconut rum before freezing for a boozy twist on this tropical treat.
