Mango Coconut Tofu Stir-Fry

Today, I’m sharing a delicious and exotic recipe for Mango Coconut Tofu Stir-Fry that is perfect for a summer evening. The combination of sweet mango, creamy coconut, and savory tofu creates a harmonious blend of flavors that will surely impress your taste buds.

Ingredients:

  • 200g firm tofu, cubed
  • 1 ripe mango, peeled and cubed
  • 200ml coconut milk
  • 1 red bell pepper, sliced
  • 100g green beans, trimmed
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • Juice of 1 lime
  • Cooked rice, for serving
  • Fresh cilantro, for garnish

Kitchen Tools:

  • measuring spoons

To start, heat the sesame oil in a wok over medium heat. Add the minced garlic and grated ginger, and sauté for a minute until fragrant. Toss in the cubed tofu and cook until lightly browned on all sides. Remove the tofu from the wok and set aside.

In the same wok, add the sliced bell pepper and green beans. Stir-fry for a few minutes until slightly tender. Pour in the coconut milk and soy sauce, then bring to a simmer. Add the cooked tofu back to the wok, along with the mango cubes. Stir in the lime juice and let the mixture simmer for another 5 minutes.

Serve the Mango Coconut Tofu Stir-Fry over cooked rice and garnish with fresh cilantro. The creamy coconut milk pairs perfectly with the sweetness of the mango and the savory tofu. Each bite is bursting with flavor and textures that will delight your senses.
