Refreshing Mango Avocado Salad

Today, I am thrilled to share a vibrant and refreshing summer dish that perfectly captures the essence of the season — my unique Mango Avocado Salad. This salad is a personal favorite of mine, as it combines the sweetness of ripe mangoes with the creaminess of avocados, all brought together with a zesty lime vinaigrette. It’s the perfect dish to enjoy on a warm summer day, whether as a light lunch or a side dish at a BBQ.

Ingredients:

  • 2 mangoes (approx. 400g)
  • 2 avocados (approx. 300g)
  • 1/2 red onion (approx. 50g)
  • 1/4 cup fresh cilantro (approx. 15g)
  • Juice of 1 lime
  • 2 tbsp extra virgin olive oil
  • Pinch of salt
  • Pinch of black pepper

To start, prepare the mangoes and avocados by peeling and dicing them into bite-sized pieces. Finely chop the red onion and fresh cilantro, and place them in a mixing bowl along with the mangoes and avocados.

In a separate small bowl, whisk together the lime juice, extra virgin olive oil, salt, and black pepper to create the dressing. Pour the dressing over the mango and avocado mixture, gently toss everything together until well combined.

Serve the Mango Avocado Salad chilled, allowing the flavors to meld together for about 15-20 minutes before serving. This salad is best enjoyed on the same day it’s made to maintain its fresh and vibrant flavors.

The total weight of the cooked dish is approximately 665g, with around 4 servings. Each serving weighs about 166g, with an estimated calorie count of 210 per serving.

One clever tip for this recipe is to sprinkle some toasted coconut flakes on top of the salad just before serving. The hint of coconut adds a delightful crunch and a subtle tropical flavor that pairs perfectly with the mango and avocado.
