Tropical Dragon Fruit Dessert Recipe

Today, I’m excited to share a recipe that was inspired by a recent trip to a tropical island. The flavors and aromas of this dish instantly transport me back to the sandy beaches and crystal-clear waters. I can’t wait for you to try it and experience a taste of paradise in your own home.

Ingredients:

  • dragon fruit (200g)
  • coconut milk (250ml)
  • lemongrass (2 stalks)
  • pandan leaves (3 leaves)
  • pomelo segments (150g)
  • palm sugar (50g)

Preparation:

Start by cutting the dragon fruit in half and scooping out the flesh into a blender. Add the coconut milk, lemongrass (bruised), and pandan leaves. Blend until smooth and strain the mixture to remove any fibers.

In a saucepan, heat the strained mixture with the palm sugar. Let it simmer until the sugar dissolves completely and the mixture thickens slightly. Remove from heat and let it cool.

Once the mixture has cooled, gently fold in the pomelo segments. Transfer the dessert into individual bowls and refrigerate for at least an hour before serving.

Serving:

The total weight of the cooked dish is approximately 700g, with 4 servings. Each serving weighs around 175g and contains approximately 200 calories.

Tips:
