Tropical Dragonfruit Lychee Curry Recipe

Introduction

Today, I’m excited to share a new recipe that I created while reminiscing about my recent trip to a tropical island. The flavors and aromas of the local cuisine inspired me to come up with a dish that combines sweet, spicy, and savory elements in a surprising way. I hope you enjoy this unique creation as much as I do!

Preparation

For this dish, you will need the following ingredients (approximate weights):

  • 200g rare purple dragonfruit, peeled and diced
  • 150g fresh lychees, peeled and pitted
  • 1 serrano chili, minced
  • 1 lemongrass stalk, bruised
  • 300ml coconut milk
  • 50g fresh cilantro, chopped
  • 30ml lime juice
  • to taste sea salt

Prepare all the ingredients as instructed and set them aside. In a saucepan, combine the coconut milk, chili, and lemongrass over low heat. Let it simmer for 10 minutes to infuse the flavors.

Once the coconut milk mixture is fragrant, add the dragonfruit and lychees. Cook for another 5 minutes until the fruit is slightly softened but still retains its texture. Remove the lemongrass stalk and stir in the lime juice and sea salt to taste.

Tips
