As we transition from summer to fall, I find myself craving flavors that remind me of tropical getaways. That’s why today, I’m excited to share my recipe for Spicy Mango Coconut Chicken. This dish combines the sweetness of mango with the creaminess of coconut milk and a kick of spice, creating a mesmerizing flavor profile that will transport you to a sunny beach with every bite.

For this recipe, you’ll need the following ingredients:

  • 500g chicken breast, cut into cubes
  • 1 ripe mango, diced
  • 400ml coconut milk
  • 2 tbsp curry powder
  • 1 tsp chili flakes
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • Juice of 1 lime
  • Salt, to taste
  • Pepper, to taste
  • Fresh cilantro, for garnish

To bring this dish to life, you’ll need the following kitchen tools:

  • chef’s knife
  • cutting board
  • large skillet
  • wooden spoon

Start by heating a large skillet over medium heat. Add the diced chicken breast and cook until browned on all sides. Remove the chicken from the skillet and set it aside.

In the same skillet, add the minced garlic, grated ginger, curry powder, and chili flakes. Cook for a minute until fragrant. Pour in the coconut milk and stir to combine. Add the diced mango, lime juice, salt, and pepper. Bring the mixture to a simmer.

Once the sauce is simmering, add the cooked chicken back to the skillet. Allow everything to simmer together for another 10-15 minutes, or until the chicken is cooked through and the sauce has slightly thickened.

Serve the Spicy Mango Coconut Chicken over a bed of steamed rice or quinoa. Garnish with fresh cilantro leaves for a burst of freshness.
