Ingredients:

  • 1 ripe mango, diced
  • 200ml coconut milk
  • 2 tbsp curry powder
  • 200g black beans, cooked
  • 1 red bell pepper, thinly sliced
  • 8 corn tortillas
  • 1 lime, juiced
  • Handful of fresh cilantro, chopped
  • Salt and pepper to taste

To start, heat a skillet over medium heat and add the coconut milk, curry powder, diced mango, and a pinch of salt. Let the mixture simmer for about 5 minutes until the flavors meld together and the sauce thickens slightly.

In another skillet, heat some oil and sauté the sliced red bell pepper until they are tender. Add the cooked black beans to the skillet and stir to combine with the peppers.

Warm the corn tortillas in a dry skillet or oven until they are soft and pliable. To assemble the tacos, spoon some of the mango coconut curry sauce onto each tortilla, then top with the black bean and bell pepper mixture. Squeeze fresh lime juice over the tacos and sprinkle with chopped cilantro.
