Today’s Unique Recipe: Spiced Mango Coconut Curry

Hello, foodies! Today I’m excited to share a recipe that’s perfect for cozy winter evenings or any time you’re craving a taste of the tropics. My spiced mango coconut curry is a delightful fusion of sweet and savory flavors that will transport your taste buds to paradise. Let’s get started!

Ingredients:

  • 1 ripe mango (diced)
  • 1 can of coconut milk
  • 300g chicken breast (cubed)
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 1-inch piece of ginger (grated)
  • 2 tbsp curry powder
  • 1 tsp turmeric powder
  • 1/2 tsp cayenne pepper
  • 1 tbsp brown sugar
  • 1 tsp salt
  • 1/2 tsp pepper
  • Fresh cilantro for garnish

Kitchen Tools:

  • knife
  • cutting board
  • skillet
  • wooden spoon
  • grater
  • measuring spoons

Start by heating some oil in a skillet over medium heat. Add the chopped onion, minced garlic, and grated ginger. Saute until the onions are soft and translucent.

Next, add the cubed chicken breast to the skillet. Cook until the chicken is no longer pink on the outside.

Once the chicken is partially cooked, add the curry powder, turmeric powder, cayenne pepper, brown sugar, salt, and pepper to the skillet. Stir well to coat the chicken in the spices.

Pour in the coconut milk and diced mango. Stir gently to combine all the ingredients. Bring the mixture to a simmer and let it cook for about 15-20 minutes, or until the chicken is cooked through and the sauce has thickened slightly.

Taste the curry and adjust the seasoning if needed. If you prefer a thicker sauce, you can simmer it for a bit longer. Serve the spiced mango coconut curry hot, garnished with fresh cilantro.

This flavorful dish weighs approximately 1200g once cooked and serves 4 hungry individuals. Each serving is around 300g and packs a burst of tropical flavors in every bite. Estimated calorie count per serving is 350 calories.

Clever Tip:

To enhance the flavor of the curry, try toasting the spices in the skillet before adding the chicken and other ingredients. This will help release their essential oils and intensify the aroma of the dish.

I hope you enjoy making and savoring this unique spiced mango coconut curry! Feel free to customize it with your favorite protein or veggies to make it your own. Bon appétit!
