Tropical Fusion: Pineapple Curry Chicken Recipe

Today’s Culinary Creation: Pineapple Curry Chicken

As the weather starts to cool down and fall approaches, I find myself craving warm and comforting dishes that are both satisfying and flavorful. That’s why I’m excited to share my recipe for Pineapple Curry Chicken, a dish that perfectly combines the sweetness of pineapple with the heat of curry spices. It’s a great way to add a little tropical twist to your dinner table!

Ingredients:

  • 600g boneless chicken thighs
  • 1 small fresh pineapple, diced
  • 400ml coconut milk
  • 3 tbsp red curry paste
  • 1 red bell pepper, sliced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 stalk lemongrass, bruised
  • Fresh cilantro, for garnish
  • Salt, to taste
  • Pepper, to taste

To start, heat some oil in a large skillet over medium heat. Add the minced garlic, grated ginger, and chopped onion, and sauté until fragrant. Then, add the red curry paste and cook for another minute to toast the spices.

Next, add the diced chicken thighs to the skillet and cook until they are no longer pink. Season with salt and pepper to taste. Once the chicken is cooked through, add the coconut milk, sliced bell pepper, and bruised lemongrass stalk. Bring the mixture to a simmer and let it cook for about 15 minutes to allow the flavors to meld together.

After the curry has thickened slightly, stir in the diced pineapple and cook for an additional 5 minutes. Taste and adjust the seasoning as needed, adding more salt or curry paste if desired.

Once everything is cooked through and the flavors have come together, remove the lemongrass stalk and discard it. Serve the Pineapple Curry Chicken over steamed rice and garnish with fresh cilantro for a burst of freshness.

This dish serves 4 and each serving weighs approximately 400g. One serving of Pineapple Curry Chicken is around 450 calories.

Pro tip: For an extra burst of flavor, try adding a squeeze of lime juice to the curry just before serving. The acidity will help brighten up the dish and balance out the richness of the coconut milk!
