Today’s Special: Spicy Mango Coconut Chicken Curry

Growing up in a tropical climate, I have always been surrounded by the vibrant flavors of mango, coconut, and spices. Today, I am excited to share with you my recipe for Spicy Mango Coconut Chicken Curry. This dish is a perfect balance of sweet and spicy, with a creamy coconut undertone that will transport you to a tropical paradise with every bite.

Ingredients:

  • boneless, skinless chicken thighs (500g)
  • ripe mango (1, peeled and diced)
  • coconut milk (400ml)
  • onion (1, chopped)
  • garlic cloves (3, minced)
  • ginger (1-inch piece, grated)
  • red chili (1, sliced)
  • curry powder (2 tbsp)
  • coriander (fresh, chopped, for garnish)
  • salt and pepper (to taste)

Kitchen Tools:

  • chef’s knife
  • cutting board
  • large skillet
  • wooden spoon

To start, heat some oil in a large skillet over medium heat. Add the chopped onion, minced garlic, grated ginger, and sliced red chili. Sauté until the onions are soft and translucent.

Next, add the chicken thighs to the skillet and cook until browned on all sides. Season with curry powder, salt, and pepper, stirring to coat the chicken evenly.

Pour in the coconut milk and diced mango, stirring to combine. Bring the mixture to a simmer, then reduce the heat and let it simmer gently for 20-25 minutes, until the chicken is cooked through and the sauce has thickened.

Serve the Spicy Mango Coconut Chicken Curry hot over steamed rice, garnished with fresh coriander. The creamy coconut milk blends perfectly with the sweetness of the mango and the bold flavors of the spices, creating a rich and satisfying dish that is sure to impress.

One clever tip for this dish is to add a splash of lime juice right before serving to brighten up the flavors and add a zesty twist to the curry. This little touch of acidity will enhance the overall taste of the dish and make it even more delicious.

I hope you enjoy making this Spicy Mango Coconut Chicken Curry as much as I do. Feel free to customize the spice level to suit your taste preferences and add in your favorite vegetables for an extra nutritional boost. Bon appétit!
