To make this exotic dish, you’ll need the following ingredients (approximate weights provided):

  • 200g long-grain rice
  • 400ml coconut milk
  • 1 ripe mango, diced
  • 1 red chili, finely chopped
  • 1 tbsp fresh ginger, minced
  • 2 cloves garlic, minced
  • 1 lime, juiced
  • Handful of fresh cilantro, chopped
  • Salt to taste

Before you begin cooking, make sure you have the following kitchen tools ready:
