Ever since I visited a tropical island last summer, I’ve been craving those sunny flavors. Today, I’m excited to share a recipe that brings together the richness of cheesecake with the freshness of mango and the sweetness of coconut. These coconut mango cheesecake bars are the perfect treat for a summer gathering or simply a weekend indulgence.

Ingredients:

  • 150g digestive biscuits
  • 100g butter
  • 300g cream cheese
  • 200ml coconut cream
  • 150g mango puree
  • 100g sugar
  • 10g gelatin
  • 1 fresh mango
  • 50g shredded coconut

Kitchen Tools:

  • mixing bowl
  • spatula
  • square baking pan
  • saucepan

To start, crush the digestive biscuits in a food processor until they resemble fine crumbs. Melt the butter in a saucepan, then mix it into the biscuit crumbs until well combined. Press this mixture into the bottom of a square baking pan to form the crust, then chill it in the refrigerator for about 30 minutes.

In a mixing bowl, beat together the cream cheese, coconut cream, mango puree, and sugar until smooth. In a separate bowl, dissolve the gelatin in a bit of warm water, then add it to the cream cheese mixture and mix well. Pour this creamy filling over the chilled biscuit crust and spread it evenly.

Chill the cheesecake bars in the refrigerator for at least 4 hours, or until set. Once firm, top the bars with slices of fresh mango and sprinkle on the shredded coconut for a tropical finish. Cut into squares and serve chilled.

The total weight of the cooked dish is approximately 1200g, with about 12 servings. Each serving weighs approximately 100g, with an estimated calorie count of 250 per serving.

One clever tip to make these cheesecake bars even more delicious is to toast the shredded coconut before sprinkling it on top. This adds a nutty flavor and a lovely crunch to the bars.
