Hey there, foodies! Today I’m sharing a delicious recipe for Mango Coconut Curry Chicken. This unique dish is perfect for bringing a taste of the tropics into your kitchen. The creamy coconut milk, sweet mango, and aromatic curry spices come together to create a symphony of flavors that will tantalize your taste buds.

Ingredients:

  • 500g chicken breast
  • 1 ripe mango
  • 400ml coconut milk
  • 2 tbsp curry powder
  • 1 onion
  • 3 cloves of garlic
  • 1-inch piece of ginger
  • 1 red chili
  • 1 lime
  • Handful of fresh cilantro
  • Salt to taste
  • Pepper to taste

Start by dicing the chicken breast into bite-sized pieces and season with salt, pepper, and half of the curry powder. In a saucepan, heat some oil over medium heat and cook the chicken until browned on all sides. Remove the chicken from the pan and set it aside.

In the same pan, sauté diced onion, minced garlic, grated ginger, and chopped red chili until fragrant. Add the remaining curry powder and cook for another minute. Pour in the coconut milk and bring to a simmer.

Peel and dice the mango, then add it to the saucepan along with the cooked chicken. Let the curry simmer for 15-20 minutes until the flavors have melded together.

Before serving, squeeze in the juice of the lime and garnish with chopped fresh cilantro. This Mango Coconut Curry Chicken is best enjoyed over a bed of steamed rice or with some warm naan bread.
