Greetings foodies! Today, I am excited to share with you a recipe that combines spicy, sweet, and creamy flavors to create a truly unique and delicious dish. Inspired by a recent tropical vacation, I wanted to bring a taste of the beach to my kitchen with this Spicy Mango Coconut Shrimp Pasta.

To start, gather the following ingredients:

  • penne pasta (250g)
  • shrimp (300g, peeled and deveined)
  • mango (1, diced)
  • coconut milk (400ml)
  • red chili flakes (1 tsp)
  • garlic (3 cloves, minced)
  • ginger (1-inch piece, grated)
  • lime (1, juiced)
  • cilantro (for garnish)
  • salt and pepper (to taste)

For this recipe, you will need the following kitchen tools:

  • large pot
  • skillet
  • wooden spoon
  • chef’s knife
  • cutting board

Begin by cooking the penne pasta according to the package instructions. In a skillet, heat some oil over medium heat and sauté the garlic and ginger until fragrant. Add the shrimp and cook until pink and cooked through. Remove the shrimp from the skillet and set aside.

In the same skillet, pour in the coconut milk and bring to a simmer. Add the diced mango, red chili flakes, lime juice, salt, and pepper. Let the mixture simmer for a few minutes until the flavors meld together.

Once the sauce has thickened slightly, add the cooked shrimp back to the skillet and stir to coat the shrimp in the mango coconut sauce. Toss in the cooked penne pasta and mix everything together until the pasta is well coated.
