  • fresh pineapple chunks (200g)
  • coconut milk (150ml)
  • red bell pepper (1, sliced)
  • green beans (100g, trimmed)
  • lemongrass (2 stalks, minced)
  • fresh cilantro (a handful)
  • turmeric powder (1 tsp)
  • garlic cloves (3, minced)
  • ginger (1-inch piece, grated)
  • lime juice (2 tbsp)
  • coconut oil (2 tbsp)
  • salt and pepper to taste

To start, heat coconut oil in a wok over medium heat. Add minced lemongrass, garlic, and ginger, and sauté until fragrant. Next, add the chicken strips and turmeric powder, stirring occasionally until the chicken is cooked through.

Once the chicken is done, add in the red bell pepper and green beans, cooking until slightly tender. Pour in the coconut milk and fresh pineapple chunks, allowing the flavors to meld together. Season with salt and pepper to taste.
