Hey there, foodies! Today I’m excited to share with you my latest creation: a Spicy Pineapple Coconut Curry that will transport your taste buds to a tropical paradise. This dish is perfect for a cozy night in or a weekend gathering with friends. Let’s get cooking!

Ingredients:

  • 400ml coconut milk
  • 1 small pineapple, diced
  • 200g cooked chickpeas
  • 2 tbsp red curry paste
  • 1-inch fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 large onion, sliced
  • 1 red bell pepper, sliced
  • 2 cups fresh spinach
  • 1 lime, juiced
  • Handful of fresh cilantro, chopped
  • Salt and pepper to taste

To start, heat some coconut oil in a saucepan over medium heat. Add in the minced ginger, garlic, and sliced onion, and sauté until fragrant. Stir in the red curry paste and cook for another minute.

Next, pour in the coconut milk and bring the mixture to a gentle simmer. Add in the diced pineapple, chickpeas, and sliced bell pepper. Let everything cook together for about 10 minutes until the vegetables are tender.

Just before serving, stir in the fresh spinach and lime juice. Season with salt and pepper to taste. Garnish with chopped cilantro.
