Introducing: Spicy Mango Coconut Quinoa

Hey there, foodies! Today, I’m excited to share with you my latest creation: Spicy Mango Coconut Quinoa. This dish was inspired by a recent trip to the tropics, where I fell in love with the vibrant flavors of mango and coconut. I wanted to combine these exotic ingredients with a hearty grain like quinoa to create a unique and delicious dish perfect for any occasion.

Ingredients:

  • 200g quinoa
  • 400ml coconut milk
  • 1 ripe mango, diced
  • 1 jalapeno pepper, seeded and minced
  • 1 lime, juiced
  • Handful of fresh cilantro, chopped
  • 50g coconut flakes
  • Salt to taste

Preparation:

Start by rinsing the quinoa under cold water to remove any bitterness. In a saucepan, combine the quinoa and coconut milk and bring to a boil. Reduce heat to a simmer, cover, and let cook for about 15 minutes until the quinoa is cooked through and fluffy.

Once the quinoa is cooked, remove from heat and let it cool slightly. Fluff with a fork and stir in the diced mango, minced jalapeno, lime juice, and chopped cilantro. Season with salt to taste.

In a dry skillet over medium heat, toast the coconut flakes until they are golden and fragrant. Sprinkle the toasted coconut flakes over the quinoa mixture and give it a final toss to combine all the flavors.

Serve the Spicy Mango Coconut Quinoa warm or at room temperature, garnished with extra cilantro if desired.

Tips:

For an extra burst of flavor, try adding a sprinkle of toasted coconut flakes on top just before serving. This will give the dish a crunchy texture and nutty undertones that complement the tropical flavors perfectly.
