Today’s Delight: Spicy Pineapple Jerk Chicken

Hey there, foodies! Today I am excited to share with you a recipe inspired by the flavors of the Caribbean and my love for spicy dishes. This Spicy Pineapple Jerk Chicken combines the heat of jerk seasoning with the sweetness of fresh pineapple for a mouthwatering meal that will transport you to a tropical paradise.

Ingredients:

  • 2 chicken breasts (approx. 400g)
  • 1 cup diced fresh pineapple (approx. 200g)
  • 2 tbsp jerk seasoning
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 red bell pepper, sliced
  • 1/2 cup coconut milk
  • Juice of 1 lime
  • Fresh cilantro for garnish
  • Salt and pepper to taste

To start, season the chicken breasts with the jerk seasoning, minced garlic, and a pinch of salt and pepper. Let them marinate for at least 30 minutes to allow the flavors to develop.

In a skillet over medium heat, sauté the diced onion and sliced bell pepper until they are soft and slightly caramelized. Add the marinated chicken breasts and cook until they are browned on both sides, about 6-8 minutes per side.

Once the chicken is cooked through, remove it from the skillet and set it aside. In the same skillet, pour in the coconut milk, lime juice, and diced pineapple. Bring the mixture to a simmer, then return the chicken to the skillet and let it simmer in the sauce for another 5 minutes.

Finally, remove the chicken from the skillet and grill it on a hot grill pan for 2-3 minutes per side to get a nice char. Serve the Spicy Pineapple Jerk Chicken hot, garnished with fresh cilantro.

Tip:

For an extra kick of heat, you can add a diced jalapeño pepper to the sauce mixture before simmering.
