  • boneless, skinless chicken breast (300g)
  • pineapple chunks (200g)
  • cashews (50g)
  • red bell pepper, sliced (1)
  • green onions, chopped (2 stalks)
  • garlic, minced (3 cloves)
  • fresh ginger, grated (1 tbsp)
  • soy sauce (3 tbsp)
  • rice vinegar (2 tbsp)
  • honey (1 tbsp)
  • chili paste (1 tbsp)
  • cornstarch (1 tbsp)
  • sesame oil (2 tbsp)
  • vegetable oil (2 tbsp)

To start, thinly slice the chicken breast into bite-sized pieces. In a small bowl, mix together soy sauce, rice vinegar, honey, chili paste, and cornstarch to make the Kung Pao sauce. Heat vegetable oil in a wok over high heat and stir-fry the chicken until cooked through. Remove the chicken from the wok and set aside.

In the same wok, add sesame oil, garlic, ginger, and red bell pepper. Stir-fry until fragrant, then add the pineapple and cashews. Pour in the Kung Pao sauce and return the chicken to the wok. Toss everything together until well coated in the sauce.
