Hey there, fellow foodies! I’m excited to share a new recipe with you today that’s perfect for a casual dinner with friends or a fun weekend meal. I was inspired to create these Spicy Mango Shrimp Tacos after reminiscing about a tropical vacation I took last year. The combination of sweet mango, spicy shrimp, and tangy slaw is truly irresistible.

Ingredients:

  • 400g large shrimp (peeled and deveined)
  • 1 large mango, diced
  • 200g red cabbage, shredded
  • 1 jalapeño, thinly sliced
  • 1 lime, juiced
  • 2 cloves of garlic, minced
  • Handful of cilantro, chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 avocado, sliced
  • 8 small corn tortillas

Start by heating a skillet over medium heat and adding a splash of oil. Toss in the shrimp, minced garlic, cumin, and paprika. Cook for 2-3 minutes until the shrimp is pink and cooked through. Squeeze half of the lime juice over the shrimp and set aside.

In a mixing bowl, combine the diced mango, shredded red cabbage, sliced jalapeño, chopped cilantro, and the remaining lime juice. Mix well to combine all the flavors.

Warm the corn tortillas in the skillet until they are soft and pliable. To assemble the tacos, place a spoonful of the mango slaw on each tortilla, top with the spicy shrimp, and a few slices of avocado. Serve hot and enjoy!
