Exploring New Flavors: Pineapple Chicken Stir-Fry

As the weather starts to shift towards cooler evenings, I find myself craving something warm and comforting with a touch of tropical flavors. Today, I’m excited to share with you my recipe for Pineapple Chicken Stir-Fry, a unique dish that combines the sweetness of pineapple with the savory goodness of tender chicken and a medley of colorful vegetables. It’s the perfect way to bring a taste of the exotic into your kitchen.

For this recipe, you’ll need the following ingredients:

  • 350g chicken breast, cubed
  • 1 cup fresh pineapple chunks
  • 1 red bell pepper, sliced
  • 1 cup snow peas
  • 1 small red onion, thinly sliced
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

To bring this delicious stir-fry to life, you’ll need the following kitchen tools:

  • large wok
  • chopping board
  • sharp knife
  • garlic press
  • grater
  • measuring spoons

Start by heating vegetable oil in a large wok over medium-high heat. Add the garlic and ginger, and sauté until fragrant. Next, add the chicken cubes and cook until they are browned on all sides. Remove the chicken from the wok and set aside.

In the same wok, add a bit more oil if needed and toss in the red onion, bell peppers, and snow peas. Stir-fry for a few minutes until the vegetables are slightly softened. Return the chicken to the wok and add the pineapple chunks.

In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, and cornstarch to create a flavorful sauce. Pour the sauce over the chicken and vegetables in the wok, stirring well to coat everything evenly. Cook for a few more minutes until the sauce has thickened and the chicken is cooked through.

Season with salt and pepper to taste, and give everything a final toss. The aroma of the pineapple combined with the savory chicken and crispy vegetables is truly irresistible.

Once everything is cooked to perfection, serve the Pineapple Chicken Stir-Fry hot over a bed of steamed rice or noodles. Garnish with some fresh cilantro or sesame seeds for an extra pop of flavor.

This dish serves 4 and each serving weighs approximately 300g. Each serving is about 350 calories.

One unique tip for this dish is to marinate the chicken in a mixture of soy sauce, ginger, and garlic for an hour before cooking. This will infuse the meat with even more flavor and tenderness.

I hope you enjoy making this Pineapple Chicken Stir-Fry as much as I do. Feel free to customize the vegetables or add some heat with chili flakes if you like. Let the exotic flavors transport you to a tropical paradise right in your own kitchen. Bon appétit!
