Today, I am excited to share with you a unique and refreshing dessert recipe that combines the sweetness of caramelized pineapple with the fresh, herbaceous notes of basil. This recipe is perfect for a warm summer day or any time you’re looking to impress your guests with a creative and unexpected flavor combination.

Ingredients:

  • 1 whole fresh pineapple (peeled and diced)
  • Handful of fresh basil leaves
  • 200g granulated sugar
  • 500ml heavy cream
  • 250ml whole milk
  • 6 egg yolks
  • 1 tsp vanilla extract

Kitchen Tools:

  • ice cream maker

To start, heat a saucepan over medium heat and add the diced pineapple and sugar. Cook, stirring occasionally, until the sugar has caramelized and the pineapple has softened. Remove from heat and let it cool.

In a separate saucepan, heat the heavy cream and milk until just simmering. In a bowl, whisk together the egg yolks. Slowly pour the hot cream mixture into the egg yolks, whisking constantly. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon. Remove from heat and stir in the vanilla extract.

In a food processor, blend the caramelized pineapple mixture with the basil leaves until smooth. Strain the mixture through a fine-mesh sieve to remove any pulp. Add the pineapple-basil mixture to the custard base and stir until well combined.

Transfer the mixture to an ice cream maker and churn according to the manufacturer’s instructions. Once the ice cream has reached a soft-serve consistency, transfer it to a container and freeze for at least 4 hours or until firm.

This Caramelized Pineapple and Basil Ice Cream weighs approximately 1200g after cooking. It serves 6 people, with each serving weighing about 200g. Each serving is estimated to have around 300 calories.

One unique tip for this recipe is to sprinkle some crushed candied basil leaves on top of the ice cream before serving. This adds a delightful crunch and an extra burst of fresh basil flavor.
