Today’s Culinary Creation: Citrus-infused Coconut Shrimp

As the warm weather rolls in, I find myself craving light and refreshing dishes that remind me of tropical vacations. Today, I’m excited to share my recipe for Citrus-infused Coconut Shrimp, a unique twist on a classic seafood favorite. The combination of zesty citrus and sweet coconut creates a flavor explosion that will transport you to a beachside paradise with every bite.

To start, gather the following ingredients:

  • 450g medium shrimp (peeled and deveined)
  • 240ml coconut milk
  • 120ml orange juice
  • 1 tbsp lime zest
  • 50g desiccated coconut
  • 100g all-purpose flour
  • 2 eggs
  • salt and pepper to taste
  • for frying

Make sure you have the following kitchen tools ready:

  • mixing bowl
  • whisk
  • frying pan
  • tongs

In a mixing bowl, combine the coconut milk, orange juice, and lime zest. Add the shrimp to the marinade, making sure each piece is coated evenly. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.

In a separate bowl, whisk together the flour, desiccated coconut, salt, and pepper. In another bowl, beat the eggs. Remove the marinated shrimp from the fridge and dip each one first in the flour mixture, then the beaten eggs, and finally back in the flour mixture.

Heat coconut oil in a frying pan over medium heat. Once hot, fry the coated shrimp in batches until golden brown and crispy on the outside, about 2-3 minutes per side. Use tongs to flip them halfway through cooking.

Once all the shrimp are cooked, transfer them to a plate lined with paper towels to drain any excess oil. Serve hot with a side of sweet chili sauce or mango salsa for a tropical twist.

This Citrus-infused Coconut Shrimp dish weighs approximately 800g once cooked and serves 4 people. Each serving is around 200g and contains approximately 350 calories.

For an extra burst of citrus flavor, try adding a squeeze of fresh lime juice over the cooked shrimp just before serving. This little touch will elevate the dish and bring out the brightness of the citrus marinade.

I hope you give this recipe a try and enjoy the tropical vibes it brings to your table. Feel free to get creative and make it your own by adding your favorite spices or herbs to the flour mixture. Bon appétit!
